  • 1 whole fish (about 1–1.5 lbs, such as sea bass, tilapia, or snapper), cleaned and scaled
  • 2 inches fresh ginger, julienned
  • 3 cloves garlic, minced
  • 2 stalks green onions, cut into thin strips
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 tsp sesame oil
  • ½ tsp sugar
  • 2 tbsp vegetable oil
  • 1 red chili, thinly sliced (optional)
  • Fresh cilantro for garnish

    • Pat the fish dry and score the sides with a knife (make 2-3 shallow diagonal cuts).
    • Rub Shaoxing wine all over the fish, including inside the cavity.
